Minced Crawfish

4 Crawfish Tails (Boiled & Peeled)
1 Medium Onion (Minced)
Garlic (Minced)
1/2 C Diced Tomatoes
3 Tbsp. Tomato Paste
1/4 C Lemon Juice
Salt
1/2 Scotch Bonnet Pepper
1/4 Tsp. Thyme
1/4 C Vegetable Oil


DIRECTIONS:

In a large bowl – mince crawfish by hand; ensuring there are no large pieces of meat left.  Add lemon juice and salt to the crawfish and set aside.

Add oil to a medium saucepan and allow to heat.  Place onions, garlic and thyme in the pan and sauté until tender.  Add in tomatoes, salt and tomato paste…cover until liquid boils.  Gradually stir in crawfish and add scotch bonnet pepper.  Cover on high heat for five minutes or until all the liquid is absorbed.
